1. Preheat the oven to 190°C.
2. Cut the eggplant into 6mm thick slices and sprinkle them with salt. Let them sit for 10 minutes to release excess water.
3. Rinse the eggplant slices and pat them dry with a paper towel.
4. Brush both sides of the eggplant slices with olive oil and place them on a baking sheet.
5. Bake the eggplant slices for 10 minutes or until they are slightly browned.
6. Remove the eggplant slices from the oven and top each slice with tomato sauce, shredded mozzarella cheese, and grated parmesan cheese.
7. Sprinkle dried basil and oregano on top of the cheese.
8. Return the eggplant slices to the oven and bake for another 5-7 minutes or until the cheese is melted and bubbly.
