1. Preheat your oven to 180°C and line a loaf pan with parchment paper.
2. In a large mixing bowl, mash the bananas with a fork until smooth.
3. Add the eggs and whisk until well combined.
4. Add the almond flour, coconut flour, erythritol, baking powder, vanilla extract, cinnamon, and salt to the bowl. Mix until all ingredients are well combined and a batter forms.
5. Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
6. If desired, sprinkle chopped nuts or dark chocolate chips on top of the batter.
7. Bake for 40-45 minutes or until a toothpick inserted into the center of the bread comes out clean.
8. Let the bread cool in the pan for 10 minutes before removing it from the pan and slicing it into pieces.
