1. Heat a large skillet over medium-high heat. Add the olive oil to the skillet.
2. Season the salmon fillets with salt and pepper on both sides.
3. Place the salmon fillets in the skillet, skin side down. Cook for 3-4 minutes until the skin is crispy.
4. Flip the salmon fillets and cook for another 3-4 minutes until cooked through.
5. Remove the salmon from the skillet and set aside on a plate.
6. In the same skillet, melt the butter over medium heat.
7. Add the minced garlic and cook for 1-2 minutes until fragrant.
8. Add the spinach to the skillet and cook for 2-3 minutes until wilted.
9. Pour in the heavy cream and stir to combine.
10. Add the grated parmesan cheese to the skillet and stir until melted.
11. Place the seared salmon fillets on top of the creamy spinach mixture.
12. Serve hot and enjoy!
